Quick and Easy Healthy Recipe – Chicken Greek Pitas

Ingredients:
4 oz. chicken breast
1 oz. Fat Free Feta Cheese
2 tbsp. Hummus
2 tbsp. Fat Free Greek Dressing
1 oz. Pepperoncini
Diced purple onion
Chopped Romaine Lettuce
1 Whole Wheat Pita
Fat Free Olive Oil Cooking Spray
¼ tsp Cavender’s Greek Seasoning

Directions:
First tenderize your chicken by piercing it thoroughly with a fork. Next season your chicken with the olive oil spray and Greek seasoning.

Preheat your grille or oven. If you are cooking on the grille, seer the chicken over direct heat for three minutes per side. Once seared, use indirect heat to continue cooking for 20-30 minutes or until done. Remember to rotate the chicken clockwise every 10 minutes. If you are cooking in the oven, cook your chicken in 375-degree oven for 30-45 minutes or until done.

Once your chicken is done it is time to assemble your pita! Spread the hummus on the inside of your pita. Add your chicken, cheese and veggies. Top with the Greek dressing. That’s it- you are ready to eat!
