Healthy Oatmeal Cookies

Raise your hand if you love cookies! Okay, now put your hand down.. Just like most of Amanda and mines recipe creations, they come from a need to satisfy a craving. For me it was that I just wanted cookies, however I was trying to avoid too much sugar. For her it so she could increase lactation for breast feeding our beautiful baby girl. (See below for that to make sense)

So if you’re looking for a low-calorie alternative, I highly recommend you try this healthy oatmeal cookies recipe out! It’s loaded with healthy ingredients and tastes absolutely amazing.

Ingredients

2/3 cup agave

1 egg

1 tsp vanilla extract

1 tsp baking soda

1 tsp baking powder

¼ tsp salt

1 tsp cinnamon

½ cup Thompson raisins

½ cup sliced almonds

1 cup brown rice or barley flour

2 ½ cup gluten free oats

¼ cup coconut oil melted

¼ cup unsweetened apple sauce

Non-fat cooking spray

Directions:

Preheat oven to 325 degrees

Mix the first 9 ingredients together into large mixing bowl.  Slowly fold in the flour and oats. Lastly mix in the coconut oil and apple sauce. Keep in mind that coconut oil solidifies when it is cold. If any of your ingredients are cold, it will affect how well the coconut oil mixes.

Measure out 1 tbsp. size scoops for each cookie and place on a cookie sheet that has been sprayed with nonfat cooking spray.

Bake for 10-13 minutes or until cookies are golden brown.

Allow to cool and then enjoy!

These cookies are made from ingredients that are thought to support lactation in breast feeding moms. That said, these are simple oatmeal cookies with a healthy twist. Despite our husbands’ deepest concerns, these cookies WILL NOT cause them to start lactating…. however, if your husband is anything like mine, telling him that they will is a great way in keeping him from eating your cookies! Same goes for a non-lactating female- these cookies will not throw you into a state of lactation.
