Healthy Energy Bites

Have you ever had those times when you just needed a quick jolt of energy? That is exactly where the creation of these tasty treats came from. Amanda and I were looking for a quick and easy afternoon snack, but we’re tired of eating the same plain old snacks. So Amanda did what she does best…rolled up her sleeves and came up with these healthy energy bites! I hope you enjoy them as much as we did.

Chocolate Almond Coconut Energy Bites

Ingredients:

12 oz. Medjool Dates- Pitted

2 cup Raw Almonds (unsalted)

½ cup shredded coconut

½ cup Carob Powder

1 tbsp. melted coconut oil

1 tbsp. vanilla extract

½ tsp almond extract

Directions:

Set aside 2 tbsp. of shredded coconut. Place the almonds, carob powder, coconut, extracts and coconut in a food processor. Blend until thoroughly mixed, but leaving the almonds with small chunks for texture. Add the pitted, medjool dates into the processor and blend until well mixed.

Using your hands mold 2 tbsps. of the mixture into balls. Sprinkle the reserved shredded coconut over the top over your energy bites. Allow to chill at least 2 hours in the fridge. Enjoy!!

Berry Dark Chocolate Energy Bites

Ingredients:

8 oz. Medjool Dates- Pitted

¾ cup Raw Almonds (unsalted)

½ cup dry mixed berries (not freeze dried)

¼ cup Carob Powder

Directions:

Place the almonds, carob powder and mixed berries in a food processor. Blend until thoroughly mixed, but leaving the almonds with small chunks for texture. Add the pitted, medjool dates into the processor and blend until well mixed.

Using your hands mold 2 tbsps. of the mixture into balls. Allow to chill at least 2 hours in the fridge. Enjoy!!
